Moody's cuts Spain's rating by two notches (Reuters)

NEW YORK (Reuters) ? Moody's Investors Service on Tuesday cut Spain's sovereign ratings by two notches, saying high levels of debt in the Spanish banking and corporate sectors leave the country vulnerable to funding stress.

Further downgrades of Spain's rating are possible if the euro zone debt crisis escalates, Moody's warned.

The agency cut Spain's government bond ratings to A1 from Aa2, concluding the review for a possible downgrade it had initiated at the end of July. The new rating has a negative outlook.

Preheat grill to medium-high.

Remove the plank from the water and place on the grill for 3 minutes per side until it begins to smoke.? Place salmon on plank, skin side down.? Season with salt and pepper.? Drizzle salmon with maple syrup.? Cook for approximately 20 minutes or to medium-well done-ness.? Serve salmon on plank on platter.

Note:? Watch to make sure the plank does not catch fire.? if it does, mist with a ?water bottle. Plank can be rinsed, washed and used multiple times.

**Baked Wings with Sweet and Spicy SoCo Dipping Sauce (serves 8-10)

2 tablespoons paprika3 tablespoons cayenne5 tablespoons fresh ground black pepper6 tablespoon garlic powder3 tablespoon onion powder6 tablespoon salt2 1/2 tablespoons dried oregano2 1/2 tablespoons dried thyme2 tablespoons Chinese five-spice powder50 chicken wings, raw

In a small bowl, combine the paprika, cayenne, black pepper, garlic powder, onion powder, salt, oregano, thyme and Chinese five-spice powder.? Put 15 of the chicken wings in a large bowl and sprinkle liberally with 1/3 of the dry mixture.? Toss until completely coated. Repeat the same process with 15 more wings, then the last 20 wings. after all the wings have been completely coated, place on a baking sheet and refrigerate for at least 2 hours.

Preheat oven to 350 degrees.

Spread chicken wings, in a single layer, on a baking sheet.? Place in oven on middle rack.? Bake for 1 hour until crispy, turning after 30 minutes.? Serve with SoCo Dipping Sauce.

For the dipping sauce:

1 cup hot sauce1/3 cup Southern Comfort Pepper3 tablespoons honey

In a small bowl, combine all of the ingredients.

**Grilled Pizza Recipe ? Pizza Party

Dough

4 cups bread flour1 teaspoon salt1 teaspoon sugar2 package quick-rise yeast1 and 1/2 cups warm water (120 to 130 degrees)2 tablespoon olive oilCooking spray4 tablespoons cornmeal

Combine the flour, salt, sugar and yeast in a large food processor or bread mixer. Mix until dough forms a ball, (four to five minutes).

Place the dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place, free from drafts, 45 minutes or until doubled in bulk. Punch dough down; divide in half. Cover and let dough rest 10 minutes.

Working with one portion at a time (cover remaining dough to keep from drying out), roll each portion into a 10-inch circle on a lightly floured surface. Place dough on pizza pans each sprinkled with 1 tablespoon cornmeal.

This makes four to five 10? pizzas.

Sauce

28 ounce can crushed tomatoes4 garlic cloves, crushed2 tablespoons sugar

Pour crushed tomatoes into a large bowl and add garlic and sugar.? Mix and store in refrigerator until ready to use. use a large ladle to pour onto the crust. the back of the ladle is great to help move the sauce evenly over the crust.

Grilling the Pizzas:

On medium heat, place dough on clean grill grates (most grills will accommodate two or more pizzas) for two to three minutes, check to make sure it has slightly browned.

Turn crust over, brush with olive oil, top with sauce (if using one), toppings and finally cheese.

Grill with lid down another 15 ? 20 minutes or until cheese has melted. Check bottom of crust periodically to make sure it does not burn.

**Fiery Pepper Bloody Mary

In a cup with ice, add 2 ounces Southern Comfort Fiery Pepper (made with real Tabasco) and 6 ounces of your favorite Bloody Mary mix.? top with optional Worcestershire sauce, celery salt and extra Tabasco.? Roll drink into an empty cup to mix and garnish with a pepper.

Tradition and quality keeps Italian rice popular (Reuters)

ISOLA DELLA SCALA, Italy (Reuters) ? Nine heavy wooden rods drop slowly into holes carved in a row in a massive marble block to peel off paddy rice in the same way used for centuries at an old water mill in northern Italy.

Slightly brownish partly milled rice, the result of 10 hours of milling and sifting, used to be a staple food for the poor. Now the rice is snapped up by foodies who believe it has a higher nutritional value than milled rice and makes perfect risotto.

The centuries-old method preserves vitamins and mineral elements contained in rice better than modern technology, say members of the Ferron family who own the Vecia Pila mill built around 1650 in the north Italian region of Veneto.

Using vintage tools is also a smart marketing move. The bucolic old mill and a next-door restaurant, run by the same family and offering various types of rice-based food, draw crowds of tourists and risotto-lovers.

The Ferrons are part of a growing number of Italian farmers and manufacturers -- from wine and cheese makers to bespoke jewelry producers -- who believe making small amounts of top quality and high price products is a better way to win consumers at home and abroad than succumbing to mass-market competition.

Export figures show that such a strategy works, especially for high quality Italian food with guaranteed labels of origin, such as IGP and DOP. Those attract consumers willing to pay above average for healthy and tasty products.

Exports of famous Italian cheeses Parmigiano Reggiano and Grana Padana jumped 26 percent in 2010, outpacing a 13 percent rise in total Italian food exports to 27.7 billion euros ($37.4 billion), according to Italy's biggest farmers group Coldiretti data based on information from national statistics agency ISTAT.

Output of Italian extra virgin olive oil with the DOP top quality label more than doubled over six years to 10,400 tonnes -- or just under 2 percent of a total average annual olive oil production in Italy -- in 2010, driven by growing export and domestic demand, industry figures showed.

NICHE PRODUCTS FOR COMPETITIVE MARKETS

Back at the Pila Vecia mill, it takes a day to make 80-90 kg of old-style partly milled rice, while a modern technology also used by the Ferrons allows them to produce nearly 100 times more at about 8,800 kg of milled white rice a day.

But the efforts to keep the tradition going pay off. The Ferrons sell partly milled rice at 3.50 euros a kg, against 2 euros for a kg of white milled rice.

Italian rice is a niche product by definition: its output is small on the global scale and traditional Italian varieties, such famous carnaroli, are used mostly to make creamy risotto rather than any other dish.

Italy is Europe's biggest rice producer but its annual output of about 1.5 million tonnes of paddy rice is dwarfed compared with the global production of nearly 700 million tonnes, mostly coming from Asia.

Italian rice growers and millers say offering a high quality product is the only way for them to compete with Asian rivals who bring by far larger volumes of cheaper rice into the European Union, the main export market for Italy.

Italy sells abroad about half of its rice output. On the home turf, competition is tough between Italian rice growers.

Producers of a rare rice variety called Vialone Nano Veronese have adopted stringent rules for cultivation and milling to win the IGP protected geographical indication label which guarantees high quality.

"We want to distinguish ourselves from the mass-market product. We want to make a niche product which has no rivals," Ernesto Artegiani, chairman of the Consortium for Protection of Vialone Nano Veronese Rice, told Reuters at a rice field near the small town of Isola della Scala, the local rice center.

About 1,100 tonnes of the IGP-marked Vialone Nano Veronese is produced a year, less than 0.1 percent of the national output, as it is grown only on 200 hectares around Isola della Scala in the Verona province.

As demand is growing, the Consortium aims to extend high quality requirements to almost all of 1,700 hectares of land in the province where ordinary Vialone Nano rice is cultivated to boost the IGP rice output to 7,200-8,100 tonnes, Artegiani said.

Artegiani and his fellow rice growers also want to keep alive a part of history and culture of the rural Veneto which has become heavily industrialized over the past century.

"The old mill and the artisan (milling) method allow us to stay close to our origins," said Alessio Ferron, 34, who represents the fifth generation of rice millers in the Ferron family. "For us rice is our life, our passion."

ScienceDaily (Oct. 10, 2011) ? Huntington disease is a devastating neurogenerative disorder that causes a progressive loss of functional capacity and reduced life span. It is an inherited condition caused by a mutant HTT gene. Although this has been known for many years, the functions of the normal Htt protein and the mechanisms by which the mutant protein generated from the mutant HTT gene causes disease are not well understood.

A team of researchers led by Fr?d?ric Saudou, at the Institut Curie, France, has now uncovered a new function for normal Htt protein and determined that this function is disrupted in a mouse model of Huntington disease and in patients with the disorder.

Detailed analysis by Saudou and colleagues determined that normal Htt protein regulates the formation of cellular structures known as cilia and that cilia were longer and disorganized in the mouse model of Huntington disease and patients. They therefore suggest that abnormal cilia could be a cause of some of the symptoms of Huntington disease. However, they also caution that further studies are needed to prove this. This point is also made in an accompanying commentary by Scott Zeitlin and Jeh-Ping Liu, at the University of Virginia, Charlottesville, who go on to note that determining this is critical to discerning whether therapeutic strategies designed to normalize ciliary function could ameliorate the symptoms of Huntington disease.

Integrative Way: Alternative therapies show promise for osteoarthritis ...

While there are many types of arthritis, osteoarthritis is the most common form and affects more than 25 million Americans. Osteoarthritis, or OA, is due to the loss of the cartilage cushion that lines the joints, leading to joint pain, reduced range of motion, and occasionally swelling and deformity.

OA is more common as we age, more prevalent in women compared with men after the age of 55, and more likely to occur in people who are obese or in those who have a lot of stress on their joints. It also has a predilection for certain joints, especially the hips, knees, spine and hands.

When OA occurs in the hands, it can be difficult to carry on one?s usual daily activities and hobbies. Standard medical treatments for OA include pain medication, physical therapy and application of ice or heat to the joints; in more advanced osteoarthritis, joint injections and surgery are recommended.

Researchers have looked at a number of alternative therapies to help prevent or treat arthritis, and glucosamine and chondroitin are two popular supplements that have been studied a fair bit for their role in this regard. Glucosamine and chondroitin are both found naturally in the body as a component of the cartilage in our joints; they seem to stimulate the growth of healthy cells in the joints, and they may also inhibit the breakdown of cartilage.

A Cochrane review of the literature in 2005 suggested that glucosamine sulfate was very effective at reducing pain and improving function in people with OA of the knees, but the evidence for chondroitin has been less robust.

However, some recent data from Switzerland suggests that chondroitin may indeed help people with osteoarthritis, especially OA of the hands. In this study, researchers looked at the impact of chondroitin in people with significant pain and functional impairment from OA of the hands.

The scientists randomized 162 people with X-ray-confirmed hand arthritis to receive either 800 milligrams of chondroitin sulfate or a placebo daily for six months. At the end of the study, those people getting the chondroitin had less pain, better hand function and less morning stiffness compared with the group getting the placebo. There was no significant difference in the use of acetaminophen between the two groups. No adverse effects were reported for the chondroitin in this study.

Should you choose to try chondroitin or glucosamine for your arthritis, there are several things to be cautious about. Many chondroitin preparations are obtained from the tracheas (windpipes) of cows, and contamination with other bovine tissue could theoretically increase the risk of prion (?mad cow?) disease.

The good news is that algae-derived chondroitin is now available on the market, so this is probably a safer bet. The standard dose is 800-1,200 milligrams per day. A more serious concern with chondroitin is that some data suggest it may increase the risk or progression of prostate cancer, so men with prostate cancer or a strong family history of prostate cancer should avoid chondroitin completely.

Some glucosamine products are made from the shells of lobster, crab and shrimp, so anyone who is allergic to shellfish should look for a vegetarian product instead. Another concern with glucosamine is that it can interact with some prescription medications including coumadin and certain chemotherapy drugs; if you are taking any of these meds, talk with your doctor before taking glucosamine. The standard dose of glucosamine sulfate is 1,500 milligrams per day.

In addition to glucosamine and chondroitin, multiple other interventions are useful for osteoarthritis. Adequate levels of vitamins A, C, D, E and K may all help to prevent progression of OA, and an anti-inflammatory diet is probably useful as well. Maintaining a normal weight as you get older also will help to protect your joints. And finally, there are a number of other alternative remedies that can be very helpful for OA, including SAMe, ashwagandha, avocado/soybean unsaponifiables, boswellia, bromelain, cat?s claw, curcumin (turmeric), devil?s claw, ginger and willow. We?ll cover these in a future column.

Amanda Knox's freedom comes at high cost

SEATTLE?? Amanda Knox's freedom didn't come cheap for her family, which confronts the challenge of trying to pay off a reported seven-figure debt incurred in a multiyear effort to spring her from an Italy prison.

Now that Knox is back in Seattle, spending private time with family members at a location that has not been disclosed to the media, speculation is rife over what's in store for her in the near term.

Observers say her earning potential as an accidental celebrity ? a turnaround from cold-blooded "she-devil" murderer to young woman wronged by a foreign justice system ? could go a long way to help repay the debt rung up by her father, mother, grandmother and others.

"Demand is as high as I've ever seen for a figure of notoriety," said Sarah Weinman, a crime-book reviewer and news editor of the book-industry website publishersmarketplace.com.

"And it makes sense, because the story around Knox is full of drama and intrigue: the beautiful college student abroad, caught up in a brutal murder, convicted by a justice system we here in America don't understand as well because it operates different from ours, then vindicated in court," Weinman said Wednesday in an email interview. "And all the while, she herself hasn't spoken up until her press conference in Seattle, and even then it was brief.? The narrative about her is so potent that any narrative she herself can construct will only fan the flames."

Knox's divorced parents, Curt Knox and Edda Mellas, took out second mortgages on their West Seattle homes and exhausted much of their retirement savings in their efforts to free Knox, according to The Seattle Times. The former University of Washington student, now 24, spent nearly four years in prison in Italy before a??jury in Perugia on Monday absolved her of murdering her British roommate, Meredith Kercher.

Knox's 74-year-old grandmother, Elisabeth Huff, took out a $250,000 loan to contribute to legal bills that are estimated to far exceed $1 million.

In addition to paying for two Italian lawyers and DNA and other experts, the family also hired a stateside lawyer, Philadelphia attorney Theodore Simon, an expert in international law known for representing Americans jailed abroad.

They also had to pay for other expenses, such as international flights, housing in Italy, food and local transportation. Mellas and her current husband, Chris Mellas, have spent much of the past four years in Perugia to be near Knox.

Donations to two organizations set up by friends and supporters of Knox, the Amanda Knox Defense Fund and Friends of Amanda, could help defray some of the costs.

Anne Bremner, a Seattle-based trial attorney with Friends of Amanda, said her group raised $80,000, which it turned over to the family.

"I think there has been some real misinformation about this family, especially in Italy and U.K. press, that they?re a family of means," Bremner told msnbc.com. "They never were a family of means. This has been staggering financially to them."

Knox reportedly kept a journal through her years in a prison in Perugia, and her writings and story could fetch a handsome sum.

"She'll write, because that's her way of dealing with things," her stepfather, Chris Mellas, was quoted as saying by The Guardian.

Simon, the family's U.S. lawyer, said potential book, TV and movie deals weren't discussed on Knox's first night back with her family in Seattle.

"In fact, Amanda is much more about asking people about how they are as opposed to explaining herself and it was only after much time and some curiosity where others started asking some questions about her prison experience. And when everyone hears about all of those (things) I think they?ll be really amazed,? Simon told CBS' "The Early Show."

Weinmann estimated that bidding by publishers for a book by Knox "would start at low seven figures."

"The core of the Knox case is the clash of two cultures (three, if you count the U.K.) and how tabloid journalism fanned the flames of what, from a forensic science standpoint, is both much simpler and much more complicated than it first appeared," Weinmann told msnbc.com.

"The similarities are nowhere near absolute, but Amanda Knox is the Roxie Hart of our generation: beautiful, willful, manipulated by but also in some control (through the crisis firm her family hired) of her image. At least, she is until she tells her own story and constructs a new image of who Amanda Knox is."

(Roxie Hart is the fictional 1920s-era showgirl in "Chicago" who murders her faithless lover husband and avoids prison with the help of a lawyer.)

Business magnate Donald Trump told CNN that Knox could "become a big star and somehow she can get some dividends out of this nightmare for herself." "The Apprentice" host didn't specify whether he'll personally help Knox in any celebrity deals, he did say that he's offered support to her family.

"I've been supporting the family and helping the family and I'll continue to help the family. They went through a lot; I just felt badly," Trump told CNN.

However, she proceeds, her family has made it clear that it will be solely Knox's choice. The family spent money on her bid for freedom solely out of love, not anticipating a windfall payback, Bremner said.

"Her family has always said it would up to her. There will be no books or movies from anyone in the family. It's Amanda's choice, and if that?s what she wants to do, they?ll support her. If it?s not what she wants to do, they?ll support her."

On trial is John Haggerty, a political operative who worked on the mayor's re-election campaigns and is now accused of convincing the mayor and his staff to pay for a $1.1 million poll-monitoring operation that never materialized, then using most of the cash to buy himself a house.

But much of the questioning so far has revolved around Bloomberg, as Haggerty's lawyers have sought to turn the jury's focus to the billionaire mayor, painting a picture of a high-rolling candidate surrounded by privileged insiders who skirted ethics rules, threw money at problems and didn't hesitate to bend the law.

Prosecutors do not accuse the mayor of any wrongdoing, and Bloomberg's representatives have said his campaign broke no laws and followed standard practices.

The cross-examination of the mayor Monday promises to be tense. Defense lawyers used their opening statements to flatly accuse him of "campaign fraud." Bloomberg's spokesman says the tactics are a sign of desperation.

Prosecutors may try to limit what questions Bloomberg must answer. Before the trial, they asked Manhattan state Supreme Court Justice Ronald A. Zweibel to bar their adversaries from inquiring about the mayor's campaign finances. The judge nixed that request but said he might revisit the issue if it arises during the trial.

Haggerty, 42, is a veteran of several prominent New York Republican campaigns. As a volunteer on the 2009 campaign of the Democrat-turned-Republican-turned-unaffiliated mayor, Haggerty was the point man on "ballot security," a term used mainly by Republicans for poll watching with an eye to preventing voter fraud.

He presented Bloomberg campaign aides with a $1.1 million budget that included more than 1,300 paid poll watchers, an office, two-way radios and other expenses, according to prosecution filings and documents aired at the trial. Prosecutors say Haggerty did little of what he promised and used about $750,000 of the money to buy his brother's share of their late father's home.

Bloomberg financed the plan with a personal donation to the Independence Party that didn't have to be reported until after the election. Haggerty's lawyers argue that Bloomberg was trying to distance himself from a practice that has at times been subjected to court scrutiny as an alleged tool for voter suppression, something that Bloomberg's aides deny.

Since the mayor's donation to the party could not legally be earmarked for a specific purpose, it is not evidence that any money was stolen from Bloomberg, the defense argues.

The trial has offered an unusual peek behind the scenes of the mayor's self-financed campaigns and inside City Hall, as some of his closest aides have answered questions about their relationship with the mayor and how they spend his money. Former Deputy Mayor Kevin Sheekey said on the stand that he didn't enjoy his first two years in office.
